This week my college roommate and I celebrated 23 years of Christmas candy making. One of the crowd pleasers is always the crunchy peanut butter balls. I roll them and she does the chocolate dip while conversation and laughter flows. So, as the Christmas music plays and weather turns cold, I share this recipe with prayer that you'll have opportunity to make them someone special in your life. The treat is good to the taste buds while the dialogue is good for the soul.
You will need:
1 cup of Skippy peanut butter
1 jar (7 oz) marshmallow creme
1 1/2 cups crispy rice cereal
chocolate almond bark
Here's what to do:
~ In a large bowl, combine the peanut butter and marshmallows creme; add cereal and stir until well coated.
~ In a small microwave safe bowl, melt the chocolate almond bark.
~ Roll cereal mixture into 1 inch balls; dip in chocolate (until completely covered).
~ Place on a waxed paper-lined pan and allow to set.
Makes about 2 1/2 dozen and can be stored in the refrigerator or freezer.
Note: I've had "flops" with different peanut butter brands so I'd stick with the Skippy.
